Pray, Eat and Bum in front of the TV.

My family normally don’t celebrate Eid al-Adha or commonly known here as “Hari Raya Haji”. When we do celebrate, we do it low key. We just cook simple traditional Raya food like curry chicken and 'rendang' and eat in front of the TV. No visiting friends and relative.

Pray, eat and bum in front of the TV. That's how we roll.

This year, since all my mom’s children are scattering all over the world and I'm the only one in Miri, we decided not to do anything. At all. So I stayed home and cooked something different for my husband instead of the usual menu.

I made roasted whole chicken stuffed with dirty rice.

Many asked why is it called dirty rice. I honestly do not know. I found the recipe online and decided to try it and it was delicious! The dish was originally from New Orleans. I stuffed the rice in a roasted chicken just to try something new and man, the taste was mind blowing!

Dirty Rice

Ingredients
1. 1 lb. chicken livers, washed, rinsed & trimmed
2. 2 cloves garlic, minced
3. 1 c. chopped onion
4. 1/2 c. chopped celery
5. 4 c. uncooked rice
6. 1/4 c. chopped fresh parsley leaves
7. Salt & pepper to taste

Instructions
1. Cook the minute rice according to package directions. Add in chicken stock for taste.
2. Pulse liver until almost liquefied.
3. In a large pan, sauté the garlic until fragrant. Cook the meats until browned.
4. Add the vegetables and salt & pepper, and cook until tender. If the mixture is too wet, let it reduce.
5. Gently fold in the rice. Season with salt and pepper. Garnish with parsley.

The roasted chicken’s recipe was from the great man himself, Jamie Oliver and here’s the recipe (I made few changes of my own):

Ingredients:
• 1 whole chicken
• 2 medium onions
• 2 carrots
• 2 sticks of celery
• 1 bulb of garlic
• olive oil
• salt and freshly ground black pepper
• 1 lemon

Instruction:

• Preheat your oven to 240°C/475°F/gas 9
• There’s no need to peel the vegetables – just give them a wash and roughly chop them
• Break the garlic bulb into cloves, leaving them unpeeled
• Pile all the veg and garlic into the middle of a large roasting tray and drizzle with olive oil
• Drizzle the chicken with olive oil and season well with salt and pepper, rubbing it all over the bird
• Carefully prick the lemon all over, using the tip of a sharp knife
• Put the lemon inside the chicken’s cavity (I squeezed the lemon all over the chicken and put the lemon among the veg)
• Place the chicken on top of the vegetables in the roasting tray and put it into the preheated oven
• Cook the chicken for 1 hour and 20 minutes
• Baste the chicken halfway through cooking and if the veg look dry, add a splash of water to the tray to stop them burning
• When cooked, take the tray out of the oven and transfer the chicken to a board to rest for 15 minutes or so.

There you go. Try it if you like and tell me about it, ey?

Ciao!

FABULOUS FRIDAY!

Top of the world to all!

What a wonderful week this week has been. The weather is awesome (Rainy cold days is my kind of beautiful day), Kaisan has been sleeping well (Or the fact that my husband take the night duty to let me sleep more), surprisingly a lot of participants for my FIRST CONTEST GIVEAWAY and best of all, I managed to cook this week!

Three nights ago I made pasta with eggplants and tomatoes and it was superb! The photo does not do justice. If I want to produce good food photos I must start getting props and invest in good lightings. Man!!!

Then the next night, I made pizza. It was my first pizza in a long, long time. I made the dough thin crust without yeast because I do not how to use yeast [Insert pathetic hyena's laughter] and had to use ketchups in a packet from Mc Donald because I forgot we ran out of tomato paste [Insert sad hyena's cries] but it turned out tastier than ever! The husband inhaled his pizza in mere seconds and was eyeing my plate like a hungry wolverine. Oi!

I have some menus set in my mind to cook this weekend but alas, there are weddings and events to attend so more likely I will be stuffing my face with other people's cooking instead.

Have a fabulous Friday, y'all!

What's Brewing in My Kitchen

In the midst of everything (by everything I mean BE RIGHT BACK MY SON JUST SPIT SOMETHING NASTY AND HOLY PURPLE MACAROONS IT’S ALL OVER HIS NEW SHIRT WHERE THE HELL IS HIS NAPKINS OH MOTHER OF ALL &$@#! SON, PLEASE STOP THRASHING AROUND EEK EEK EEK! IT’S NOW IN HIS HAIR SOMEONE HELP ME!!!!) I managed to find time to cook myself something.

Few nights ago, I made this:

Potato & Mushroom Gratin.

I got this recipe from the Goddess herself, Nigella Lawson. I bought her book FINALLY AFTER SO LONG OF WANTING IT NEXT WILL BE JAMIE OLIVER’S 30 MINUTES SHITNOT I CAN’T REMEMBER THE TITLE.

Verdict: Délicieux! The Mister loves it and asked me to cook it again but THE BABY! THE BABY! I SMELL SOMETHING FROM HIS BUTTHOLE! GAAAAH! IT’S LIKE SOMETHING DIED IN HIS DIAPERS! OPERATION CLEAN BUTT ON THE MOVE! OY! OY! OY! STOP FLAILING AROUND! GAH! I HAVE HIS STOOL ALL OVER MY NEW BEDSHEETS! OH CRY ME A RIVER! So, yeah, I was pretty busy.

And after reading that poop incident I can guarantee no one wants to cook or eat this dish at all. But I’m a very sick person. Here’s the recipe. Go nuts.

Ingredients:
3 average size potatoes
350ml full-fat milk
2 x 15ml tablespoon butter
2 teaspoons garlic oil (I used veggie oil and garlic powder instead)
250g chestnut mushroom –finely sliced
Salt and pepper to taste (I used chicken stock instead)

1. Preheat oven to 220C and butter a shallow baking dish or gratin
2. Bring the sliced potatoes and milk to boil in a saucepan, season with salt and pepper to taste and stir occasionally, then leave at a simmer while you get on with the mushroom.
3. Warm butter and oil in a frying pan over a medium high heat. Add the mushrooms and cook, stir occasionally until softened (about 3 minutes)
4. Pour the mushrooms and their garlicky butter juices into the pan of potatoes, stir to mix and pour straight into the gratin dish. Bake in the oven for 45 minutes or until crisp on top.
5. Eat with roasted chicken or just like that.

Enjoy!

All Day... All Night... What the Food!

H: Are you going to blog about this?

W: No. Maybe. I don’t know. I guess? Why?

H: It’s a no then?

W: High probability it is a na’ah. I’m so lazy…

H: Too bad. Want me to blog about it instead?

W: Go nuts.

And so the Mister Blogged about what I’ve been baking/cooking these past few days. Check out his POST!

Baked Spicy Chicken Pasta

Chopping. Stuffing. Scrambling. Frying. Enjoy.

Colors. Colors. Various beautiful colors.

First there's purple brinjal with a touch of green.

Then red hot chili fiery and spicy.

Come yellow, yellow egg yolk so mellow.

Mix it and fry it and yummilicious 'terung sambal' is served!

Tada! (The fried brinjal was a tad too brown for my liking so I discolored it to make my superlative, hyper active conscious content)

There will be more food post coming soon. You have been forewarned by the pregnant eating machine.

I cannot believe myself when it comes to being a WORLD CLASS IDIOT CATEGORY A+++!

There I was, sitting in front of my Mac with my hand inserting my camera's memory card into Mac's memory card reader WHILE MY EYES WERE WATCHING TV AND GUESS WHAT I DID OH MY GAWD HOW STUPID CAN I BE I ACCIDENTALLY INSERT IT IN THE CD SLOT INSTEAD AND NOW I DO NOT KNOW HOW TO TAKE THE MEMORY CARD OUT AAAAAARRRRRRGHHHHHHH HOOOWWW STOOOPID SHOULD JUMP OFF A BUILDING OR HANG MYSELF TO A NEAREST PAPAYA TREE BEAT MYSELF SILLY SLAP HEAD KICK BUTT THIS IS THE MOST WHATHEFARK THING TO DO GRRRRRRRRRRRRRR!!!!!

While I silently murder my brain, enjoy this photo I took from the Mister's phone. I made this for lunch today. World most simplest, easiest roastered chicken. Marinate it for 2 hours with soya sauce, salt, chopped garlic and roast it in an oven without oil. I took a bunch of photos of it BUT AS I SAID MY MEMORY CARD GOT SWALLOWED IN THE MAC'S CD SLOT AND I AM PULLING MY HAIR IN FRUSTRATION HOW COULD I BE SUCH AN IDIOT THAT IS ONLY IDIOT PEOPLE WOULD DO AAAAAARRRRRRRGGGGHHHHH!!!!!

FAB FRIDAY

Hot and Spicy weekend up ahead!

I don’t fancy fermented chili as it kills the original taste and murder the spiciness. And since fresh chili’s life span is as short as my breath running a marathon, I freeze it to keep it from turning bad.

Yes, FROZEN CHILI.

As and when I want to use it, I’ll just take it out from the freezer, leave it for 2-3 minutes and chop, chop, chop. The taste is the same as fresh chili, so no biggie there. Booyah!

How do you keep your veggie fresh? Do share!

I don't need the stars to tell me we're not compatible. The signs are just everywhere.

If you follow me in Twitter or Facebook, this is just a repeat story from my rant last weekend.

Yes, the part where Tweeted/FB that I failed to bake 2 cakes in 2 days.

The first cake I made was a banana cake. I brought home 7-8 pieces of ripe bananas hoping to ease my constipation (What? I’m pregnant! Constipation is NORMAL but effin nuisance) but after I ate one piece I decided I rather eat old shoes. Sorry to all banana lovers out there. It’s just my taste bud lately has gone eff-the-what. Even nice tasty cheesecake (which I bought from a bakery that cost me a king’s ransom) made me threw 8 miles projectile vomiting.

I should heed the warning there but I ignored it completely. Rooky mistake there, me.

I decided to not waste the bananas by baking it. Banana muffin? Banana cake? Banana hamana hamana? Banana cake it is.

So yeah, there I was, bravely venturing into the zone so unknown to me –baking.

Following the recipe I took from the Internet to the dot, I was confident I would make another success history in my life. Little that I know, the history was about to declare itself A BIG FAT GOOEY FAILURE.

The cake turned out –as I mentioned earlier on- gooey. Too much mash banana. F-F-F-F-F-F-F!!!!!

Defeated but not wanting to give up, the next day, after lunch I baked Oreo cake instead. This time, it was PERFECT. Well, almost… I was watching The Walking Dead and next thing I know, my cake was walking dead on its own. It was charcoal black coz I left it too long in the oven. Another epic F-F-F-F-F-F-F-F!!!!

I’m just going to stick with cooking. At least with cooking, I’m slightly better at it. Yes, the word is slightly. Better than burning the whole meal up… GRRRRR!!!!

Only today I realized, I do not like cake very much. Maybe that’s the reason why I suck at baking. I like cooking better coz I only cook what I like to eat and as for baking, I seldom eat cake. Unless serve or when my craving kicks in and that only happen like once in every century.

That’s a revelation that one.

And that’s when I decided to screw baking.

Yeah. Screw you, baking! You and your crazy measurement, ingredients and all! *Raise fits in the air*

Food Craving: It's better to cook it yourself

The best sup tulang I've ever tasted was maybe when I was in primary school. It was made by my Rukun Tetangga (neighborhood committee) during Hari Raya Aidil Adha. It was the best gotong-royong cookout ever!

Too bad nowadays the concept is non-existent in our modern community.

Ever since then, sup tulang has been my top 10 favorite food to eat. It's not easy to find the tastiest sup tulang in Miri. There's always something lacking whenever I eat this dish at a restaurant. Yes, I am very fussy when it comes to my favorite dish and to make it even more horrific; I'm pregnant and my craving is kicking up a storm die-die want to enjoy a nice, delicious sup tulang!

So, there I was again, repeat déjà vu from the Pavlova experience; Cook it myself.

And THANK GOD it was DELICIOUS! It's true what they say, the best dish is the one you cook yourself. Coz only I know what I want.

I burned my tongue eating this dish though... What? My dinosaur baby couldn't wait to devour it! It was THAT GOOD.

I also cooked the Mister his favorite dish: Mustard Green (sayur sawi) with oyster sauce.

After that big lunch... it's time for a siesta!

Ciao!

FAB FRIDAY

I smell a long weekend coming our way and that means; BREAKFAST LIKE A KING!

Mini Pavlova in a cup

I don't exactly know what Pavlova actually taste like. I’ve been asking some friends to bring back a piece for me from KL or Singapore but everyone said it gets soggy very fast. That sucks. I imagine soggy Pavlova would taste like old socks so I stop nagging my friends to bring back one for me.

Tired of salivating at the photo, I decided to make one.

Yeah. You read that right. I, Balqiz, the two left hands when it comes to culinary skill, the one who NEVER bake in her whole life, the one who thinks ‘preferably room temperature egg’ in a recipe means I have to put the egg under my armpit to ‘warm up’ the refrigerated egg, wanted to bake my own Pavlova.

WHAT. THE.

I scouted the dessert’s recipe like a hellhound on a deadly mission.

I finally found the easiest, simplest way and thankfully, easy. And because I am VERY NOT confident I can pull a Nigella Lawson in mere seconds (miracle does not happen to me when it comes to baking), I decided to do a mini Pavlova.

So, on a Sunday afternoon, after battling with sugar, white eggs, corn starch and all the baking equipment that were so alien to me, I managed to create:

I don’t have strawberries or berries so I just add grapes coz good God, the Pavlova itself is already sweet and add with strawberries? No thank you! I cheated a bit by using a ready made whip cream by Nestle.

So, my verdict? Meh. I like the texture of the meringue but I KNOW I need to improve more if I want to really enjoy a good Pavlova. But, good try, me! At least I get to use the cake mixer which has been looking at me pathetically all these while ever since I bought it.

P/s Yeah, the Pavlova look mashed here. That's because I broke the meringue just so I can squeeze it in the cup. I am a JI-NI-ES.

Sukatiku Entam Roasted Chicken Wings

Armed with some kick ass kitchen utensils, a pregnant belly and zero cooking skills, I made my own version of roasted chicken wings.

Voila!

Too bad the photos didn't turn out as delicious as the chicken though. Epic.

Sukatiku entam resipi:

Chicken wings, chicken stock, soy sauce, oyster sauce, chili powder, garlic powder, cilantro, olive oil and pounded garlic and ginger. Leave it marinate for 2 hours then roast it to death for 20 minutes. Devour it while its hot.

BEST. BERBUKA. FOOD. EV-ER. EV-EEEEERRRRRRRRRRRRR!

I present to you, my second lover who gives me orgasmic pleasure to the max (the first one is of course, my husband) -BUAH DABAI!

SLURPFEST!!!!

Waving a white flag (Cooking chicken stew)

I was craving for Mom’s chicken stew few weeks ago but she was in KL so I was like AAAARRGHHHHH and since I am not famously known for my patience virtue, I decidedly to venture to the kitchen and cook one myself.

I was such a brave, brave young lady… *On bended knees praying hard I will not burn the kitchen down*

Fry onions with olive oil, add chicken, add po-ha-tos, add carrots, add water, add a teaspoon of chicken stock, add bit of black soya sauce, add corn flour and lastly add mushroom.

I ate 4 servings before realizing OHCRAPIDIDN'TTAKEPHOTOOFIT so that explains why I only post a photo of... chicken bones with bits and pieces of meat left. Oy...

Though it didn't taste EXACTLY like Mom's stew, meh, whatever *wave hand tiredly*

Sunday's Brunch -Beef Kebab

1. Fry mushroom, carrots and mince meat with onions and olive oil to make the filling.
2. Once done, strain excess oil.
3. Then mix filling with a spoonful of mayonaise.
4. Stuff some chop lettuce together with the fillings in a slice of wholemeal pita bread.
5. You can add cheese if you want but I ran out of cheese.
6. Then you eat. Yummeh!

"Vegetables and fruits are your best friend...

... Major, major BFF during this time. Even when you don't feel like talking or hanging out wif your BFF, force yourself to do so coz they ARE crucial for your current well-being" quoted an article and altered a bit by moi.

For lunch today:

Steam Carrots with chopped garlic, salt, olive oil and mixed dry herb.

For dinner tonight:

Fresh Salad.

Ingredients for fresh salad:

Tomato
Green leaf salads
Boiled eggs mashed with tomato ketchup

I feel healthy already.

Unfortunately... I'm still hungry.

It's all orange, baby.

I usually LOVE chocolates but lately my taste bud converted into a new religion called: CHOCOLATES ARE ICKY. Sometimes I like to call it, GET THAT SHIT OUTTA MY FACE, when someone offer me one nicely.

Me no likey chocolate.

But I can't stop my muncher habit so now I munch on:

Dry apricots.

Aside from sinfully delicious, it helps me to poop regularly too. Oh I looooove to poop.

And when I feel like it, I'll be munching dates and prunes. Old people snack food is officially my kind of snack. I am either embracing me turning the big 3-0 or senility is kicking in early.

Hot lemon honey drink

This is a kickass drink to gulp when you're having a bitchy cough. Even though it burns my throat when I drink it hot, it reduced my cough from KONG KONG KONG KONG ARGHHH KONG KONG KONG KONG EFFFFFF KONG KONG KONG KONG to Kong. Kong. Eff. That's why I called this cough, the Kong Kong Cough (Batuk Kong Kong).

I'm getting slightly better now. The lack of update is because I'm busy playing Words With Friends. If you're playing it, do add me. My ID is Balqiz (duh! It would be extremely ridiculous if I named myself KIMORA innit? Puh-puh-po-ser)

That's all from me today.

P/s I just realized that some emails my readers send to me asking for the Baby Making password ended up in my spam box. I managed to retrieve few and emailed them the password but I think there are more in the spam box in which I diligently delete once every 2 days. So for those who didn't get a reply from me, please email me again at balqizs [at] yahoo.com or balqizs [at] gmail.com. Cheers!

I almost threw a bloody tantrum today due to one bitch screwing up my work at the office so I stormed out and went grocery shopping and bought myself...

UDANG GALAH (Fresh Water Prawn) !!!

I reached home and straightaway cook it and 10 minutes later:

Udang Galah Masak Lemak Cili Api

My prawn look so relax.  It even crossed its arms while smiling up at me. My broth must be so warm and cosy for it to chill like that.

It was simply délicieux!

The prawns are so happy dancing in my stomach.

Fully sated.

Bai.

Sayur Labu Masak Lemak

I deliberately post the photo as big and as wide as possible just so you can LICK YOUR MONITOR COZ I COOKED THIS DELICIOUS DISH ALL BY MYSELF YOU BETTER BELIEVE IT! High-five, Me!

This dish has always been my favorite ‘sayur masak lemak’ (Direct Translation: Vegetable Cook Fat) however NOT ONCE have I eaten one that is PRECISELY AND EXACTLY as how I wanted it to taste like.

And God knows why and how, suddenly yesterday I was inspired to cook the dish EXACTLY HOW I WANTED IT TO BE and after half an hour wrestling with pots and pans in the kitchen, smoke in my eyes, blisters on my fingers -I DID IT!

As soon as I took a sip, I can hear my dead ancestors singing cheerfully behind me. Aaah… bliss!

The mister enjoyed it as much as I did so it’s a WIN!

Pauper Dinner

The mister and I gained 2kg each these 2 months. Huh. Yeah, marriage life is THAT good.

So we decided to cut down our carbs-infested-fatteningly-obese food to something carbs-not-so-much-fat-but-still-be-yummy-to-swallow food.

That's where we thought of what we like to call, "Pauper Dinner"

A pauper dinner is food in a small portion of carbs and fat like ceasar salad,  lean white/red meat cooked with vegetables and etc. No rice. No second helping. No midnight snacking or dessert except fruits.

It was haaaaaaaaaaaaaaaaaaard!

For an eating machine like me who eat and poop for living, eating a small portion like that felt like FUCK and each and everytime after dinner, I wanted to throw myself on the kitchen floor and bawl my eyes out. Once, I almost bite off the Mister's thigh for taking a bit of my portion of food. Yes. Yes. I was THAT hungry.

A week after following the regime, it didn't feel that bad anymore. Whenever I feel like snacking, I grab an apple instead. The other night I made the Mister apple juice (THANK YOU ME FOR BUYING YOURSELF A JUICE MAKER LAST YEAR! GOOD INVESTMENT DUDE!)

But when we were invited to have dinner out with family and colleagues, our pauper dinner slowly changed to a king's dinner! That's the reason now we gained each 2kg. FOL.

So here we are again. Starting our diet regime. Again. But this time, the Mister is going to add "exercise" as part of our losing weight regime. Shat. Shat. Shat. Everyone knows I HATE exercise. But that 2kg must go! So yeah, I'll lift my gigantic butt off the sofa and gym, kick-boxing, jog, walk, walk, walk... I rather go through puberty all over again but 2kg! Ugh...

Anyway, the other night I made Potato Jacket for dinner. Unfortunaly the jacket didn't turn out well. So instead, I mashed the soft boiled potato with a bit of salt, 1 raw egg, pepper and scoop it into a plate. On top I placed pieces of cheese and microwave it for 3 minutes.

Voila!

It was delicious! Take my word. Please. And yes, that's dinner. ONLY THAT. I can hear you screaming in your head right now. Unbelievable right?

Have faith. Hahaha.
